This flagship bottling is an homage to Louise Pommery who took over the house in 1858. She developed and championed a brut (dry) Champagne when the standard of the day was sweet Champagne. The definition of Champagne wines was forever changed.
The 2004 cuvee, a blend of Chardonnay and Pinot Noir from 3 of the region's best grands cru, received deservedly high scores from wine critics. Always refined and reserved, the wine has a lower dosage than is common, hence, the Brut Nature designation.
In the glass, the wine shows pale gold with a hint of green, the mousse is lacy and the perlage is delicately small and tight. The nose offers frangipane, biscuit, wild strawberry, lemon curd and subtle white floral notes. The exquisitely balanced palate provides ethereal echoes of hazelnut butter, cooked apple, pureed blackcurrant and poached apricot. A defined thread of minerality is present from the first sip to the final drop.
