In 2011 a Scotsman named Alastair Brogan packed up his family and ventured out to Boulder Colorado where they settled and now call home. They set out after Alastair commissioned a 1,000-gallon copper pot still from one of the oldest still makers in the world, the famed Forsyth's. This decision was made after Alastair wanted to slow down from having lived a colorful background. He started out in the Royal Air Force (currently he's a veteran) and then he moved into the role of Vice President for the family business. He has also been voted off Survivor and became a world traveler after that. Eventually, he chose to follow his lifelong dream and make whiskey. Sure, Alastair could've stayed in Scotland to pursue his dream and deal with the long, brittle winters making textbook Scotch but instead his sense of adventure and intrigue for innovation made Colorado the perfect place to settle. Now he is the owner and operator of Boulder Spirits by Vapor Distillery which holds the acclaim of having the biggest pot still in the state. Alastair's mission statement is to make the best versions of American Single Malt Whiskeys, Bourbons, and Gins. Furthermore, he labels themselves as a "small Colorado whiskey company with big dreams and bigger goals crafting their products from the best barley, yeast, locally sourced water, American oak, and the pursuit of happiness". To Alastair, these key points make up the foundation of what Boulder Spirits stands on. Built as an introduction to peated malted barley, Boulder uses the same slow distilling methods that they use in their New American Single Malt. They use a lightly peated malted barley first then rest it in virgin American Oak barrels in Colorado's semi-arid environment for at least 3 years. Boulder's climate is much drier than Scotland which has many benefits for whiskey production. Alastair also uses pure Rocky Mountain water from Colorado's Arapaho Glacier and matures the single malts at mile high elevations giving them a complex and unique character that will satisfy the novices along with the connoisseurs. Amber in color with aromas of earthy, smoky peat and baking spices lead into a rich palate of woodsy vanilla, pumpernickel, and baked gingerbread. Finishing deep and medium with candied berries, roasted nuts, and fresh maple with pops of salinity. Chewy yet crisp the crystal-clear Arapaho Glacier snow melt combined with new American oak barrels creates its distinctive Colorado Rocky Mountain flavor.
