Aligote is the "other white grape" (read: not Chardonnay) allowed for white wines in Burgundy. The wine is expressive with a notable freshness accented by acacia, wildflowers and lemon. Light-bodied, it flaunts brisk acidity surrounding a core of apple, pear and citrus. An excellent aperitif or pair it with gougeres, escargot with garlic butter, strong goat cheese, grilled fish or oysters.
