Fromager d’Affinois is the crowd pleaser. It is has a silky, satiny texture which makes the cheese feel like a triple creme. It is made by ultra-filtration, a relatively modern process that claims a very high percentage of nutrients and butterfat from the milk during the making of the cheese. This ultra-filtration gives the cheese a superb texture. Fromager d'Affinois has a clean, rich, and creamy taste. Excellent with a spoonful of Pretty Peppers, Raspberry Chipotle Sauce or Brandied Cherries.
