Soft-ripened, it is firm, yet buttery with a mellow, earthy flavor reminiscent of white mushrooms, and a great washed rind. Cowgirl Creamery was founded by three women in 1997 and named its signature cheese Mt Tam after Mt. Tamalpais, which rises like a monument to Northern California's natural beauty.
