97 pts from Wine Enthusiast Magazine. Ryan Reynolds is still an acting part of Aviation Gin even though he sold the company in August of 2020. Having said that he wanted to do a signature bottle so he crafted one by blowing the bottle himself and then etching his signature into it. Handcrafted in small batches by a dedicated team of master distillers in Portland, Oregon the recipe was created by pioneering bartender Ryan Magarian and master distiller Christian Krogstad. They wanted to craft a gin that is more versatile and mixable whether its shining on its own, mixed into vintage drinks, or used in contemporary culinary cocktails. Many gins can be medicinal and harsh due to the juniper being to overpowering. Instead Aviation uses seven different botanicals to create a balanced blend. Cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel are infused during maceration by steeping them until the flavors have bonded. This is done for 18 hours in macerating tanks. The botanicals are placed in nylon sacks and then suspended in a pure, neutral grain spirit to keep the integrity of the flavors. Other gins are infused by vapor distillation which is passing heated alcoholic vapors through a basket of botanicals which can cause the harshness in the flavor. Once the botanicals are fully macerated the blend is pumped into a still along with pure water. This is then slowly heated with the vapors directed into the condenser. Once the process of cooling starts the vapors form the gin distillate. Each step is monitored throughout with "The Cut" being the most meticulous. The "heads" are the first fluid that leaves the still. Once that is removed, they can go on to collecting the "heart of the spirit" throughout multiple runs. Once the distillers determine the end of the cycle, they can make the final cut, "the tails." Taking approximately 7 hours to get to this point, the final "heart cut" is at 142 proof. Once that is done the "heart cut' is transferred to a blending tank. Pure water is added to get to the desired proof. Once it is at 84 proof it is sent to be bottled then hardpacked into boxes for shipping. Aromas of juniper are tempered by delicate floral notes of candied violets, citrus zest, and green herbs. On the palate you get rich, savory spices with the floral notes carrying through. Finishing long with warm spices and citrus zest with some crisp, freshness that is indicative of the Pacific Northwest. Harmonious from start to finish enjoy chilled on its own or mixed into your favorite cocktail or new creation.
